Can't see the phone screen in sunlight

When I'm outside, the light make my screen practically "invisible" for lack of a better term.

Is there something I can about this? I have a phone case covering it.

This is normal.
Make sure you're not wearing sunglasses and / or raise the brightness of your screen.
That's about all you can do being in the sunshine

Aside from increasing screen brightness: Perhaps an anti-glare screen protector would fix this. Fair warning: I've never used an anti-glare screen protector myself, so I can't say from personal experience if they're effective.

There's not a lot you can do about this when you're outside in direct sunlight. A lot of this will be based on your particular phone model and which type of display it has (typically OLED or LED LCD) but keep in mind that all our smartphones have a screen that uses some kind of backlighting, so it's just a matter of how much light is being projected on your phone vs. the amount of light is flooding down on you from the Sun.

A lot of eBook readers like a Kindle that have screens that do have pretty good capability to be used in sunlight, often referred to as 'e Ink', but don't forget that eBook readers have screens used for a single purpose, displaying text. Which phone do you have? Your manufacturer's web site should provide a list of hardware specs that state what kind of display is inside your model, and there are other third-party sites that might provide more extensive hardware specs.

Many phones these days can get brighter on auto brightness than when setting brightness manually - a short-term boost for these circumstances - so if you aren't using automatic brightness maybe try that and see. But as boosting brightness generates more heat they can only do it for a few minutes at a time, and may go quite dim after that as they need to cool down to avoid damage (actually if the phone is too hot it won't boost brightness in the first place, regardless of why it is hot). But if your phone can't get bright enough the only thing you can do is shade the screen to make it more readable.
