Because they were never in sync in the first place?

Samsung firmware updates are pushed out by Samsung, unless you have a carrier variant phone, where the updates will be sent out by your carrier.
Google Play updates are issued by Google itself. Samsung Store updates are sent by Samsung.

I'm sure the only times you'll see updates that are all in sync, is if you have a Google Pixel or an Apple iPhone. Because otherwise they'll be coming from different sources.

As stated, they'll never be in sync because you've got 2 different companies releasing updates independent from each other.
